Toast Roll (Jam Coconut Roll-Ups)

Jam Coconut Toast Roll Ups is a deliciously addictive eggless dessert that can be prepared in less than 15 minutes using ingredients from your pantry. They remind me of the jam coconut buns from the famous Iyengar bakery.

What do you do when you have unannounced guests at home or if your kids ask (read that demand) you for an instant sweet treat? Well, I’ll tell you what I do. Depending on what ingredients I can find in my pantry, I either make Almond Butter Brownies or these Jam Coconut Toast Roll-Ups.

What are Toast Roll-Ups?

  • Toast Roll-Ups are a sweet treat made using bread as the main ingredient.
  • It is smeared with a filling of choice, usually some sort of jam, and rolled tightly like a Swiss roll. It is then toasted with generous butter.
  • They are crisp on the outside and soft and gooey inside, the best of both worlds in my humble opinion.

I grew up eating baked goods from South Indian bakeries, fondly called Iyengar bakery. Out of all the treats, I loved their jam coconut buns, and honey cake. They had the same jam and coconut flavor combination and it works like a dream. The juicy sweetness from the jam and the texture of coconut sing a harmony of yum that can get you high.

Toast Roll-Ups

I like experimenting with my favorite flavors and found that the jam-coconut combination worked like a charm in these toast roll-ups. When you take a bite, the crispy crust oozes out warm butter that gently teases your taste buds. Soon after, a gust of sweet-tart jam makes your mouth water and before you know it there’s a surprise textural element from coconut. You’ll want to take another bite and another till you realize you’ve gobbled an entire plate. Trust me, they are very addictive.

You’ll make your guests into thinking that you spent hours working on these delectable treats but in truth, you’d have spent less than 15 minutes whipping these up. Using good quality white bread and jam is the key. They can make or break your dish.

Toast Roll Ingredients

White Bread

It’s important to use white bread for this recipe. Whole wheat bread or multi-grain bread does not have enough gluten to roll without breaking. Try using white bread made of unbleached flour or better yet, make it at home.

Jam

Any jam of choice can be used. I like to use strawberry jam or mixed fruit jam.

Coconut

I prefer using grated coconut as I like a juicy bite. However, you can also use desiccated coconut.

Butter

Use unsalted butter for toasting the bread if possible. You can also use ghee or coconut oil if you want to make it vegan.

Step-by-Step Method for Making Toast Roll-Ups

Prep the Bread

Take a slice of white bread and remove the corners using a serrated knife. Use a rolling pin to flatten the bread. If you do not flatten the bread, it will be difficult to roll it. This is where using a while bread makes things easy. Whole wheat bread or multi-grain bread will break when you try to roll them due to their weak gluten content. You can try using it though and let me know how it turns out.

Take a teaspoon of jam and spread it on the bread evenly. Sprinkle grated coconut on top of the jam, making you leave a ½ inch gap on all sides. This is to ensure that the coconut doesn’t spill out when you roll the bread.

Roll the Bread

Now, roll the bread slice tightly from one end to the other, like a Swill roll or roulade. Look at the picture below for reference. Seal the edges using jam. If that doesn’t work, you can apply a thin layer of milk to the edges and seal the corner.

Toast the bread rolls

Heat a pan and add some butter to it. Slowly add the rolled bread slices to the pan with the sealed sides down.

Rotate the bread rolls once to make sure the butter covers the entire roll. Alternatively, you can also spread some butter on the top exposed part of the roll.

Roast it on medium-low, turning it every now and then.

Depending on the heat of your pan and the amount of butter you add, it will take anywhere between 8-10 minutes for the rolls to be toasted nicely on all sides.

Serving Suggestions for Toast Roll

Remove it from the pan to a plate. Sprinkle some granulated sugar on top. I like the crunch from the sugar and it adds an extra texture to your already amazing toast roll-ups.

Set aside for 2-3 minutes to cool down and serve it warm.

These rolls are best served immediately. However, you can pack them as a snack for your kiddo’s snack box. Just make sure you pack them in an air-tight container after they are cooled down completely. Refrigerate the leftovers as it has coconut.

My Toast Roll keeps coming apart. How do I seal them well?

  • Use jam to seal the edges well. If that doesn’t work, apply a thin later of milk on the edges to seal the roll tightly.
  • When you start toasting them, put the sealed side down first and toast them slightly before turning. This will in turn seal it even firmly.
