Easy Jackfruit Rice (Kathal Biryani)

I saw Kathal Biryani recipe on a TV show first time and thought of giving it a shot. My first attempt turned out to be okay. It was tasty, but I was not completely satisfied so I decided to give it another shot, and just making with my intuition. And the result as I was expecting turned out to be great and everyone in my family liked it.

Also, I got quicker with the second time around. It is just a matter of some practice. I am sure you will be able to master it on the first go! I have simplified the lengthy procedure for you.

What is a Biryani?

Biryani is full of flavors and is cooked differently in various parts of India and is most popular for its non-vegetarian versions. But on Deliciously Vegetarian, we will take our Biryani to whole new level with the addition of jackfruit.

What is a Jackfruit?

Jackfruit is very popular in Asian countries, some use it in desserts while some for savory dishes. You might get your hands on it in Asian grocery stores. Best if you can find fresh otherwise frozen, but your last option should be the canned version. Honestly, I have never tried the canned version but I believe it is not as great as the fresh one! So if you are lucky and get to buy the fresh jackfruit, then go ahead with this recipe. If not the stay tuned for my next biryani edition 🙂

Instructions
  1. Start by frying jackfruit, this might take a while. Fry on a medium to high flame until it is golden brown.
  2. Start out by chopping the jackfruit and frying it on a medium high flame until golden brown. Cut onions for garnishing into thin slices and fry them on medium high flame until golden brown
  3. Rinse rice in water to get rid of excess starch. Add water in a pan and add all the spices. Once the water starts to boil, add the rice. Cook rice until they are partially done. They shouldn't be completely cooked, slightly undercooked.
  4. For the jackfruit layer start by heating ghee/oil in a pan. Add all the spices bay leaves, cumin, cardamom, cloves, garlic and ginger. Cook until ginger garlic turn brown. Next add onions and saute until golden brown. Add tomatoes, chillies and turmeric and saute until the oil is separated from this mix. Add curd and saute again for good 2-3 minutes. Add salt
  5. For garnishing warm milk in microvawe, not hot but luke warm and add saffron. Set it aside.
  6. For assembling in a pan put a layer of rice followed by a layer of jackfruit, repaet the process twice. Finish with rice layer and add fried onions, saffron, coriander and ghee. Put a lid on it and let the rice steam on a very low heat for about 10 minutes before serving.
