I like to use Ghirardelli milk chocolate chips. You can use any brand that you can find. The key point is to use a chocolate that you would enjoy eating.
  • Oil (vegetable or coconut oil) – Adding a small amount helps the chocolate melt evenly and stay glossy. I always prefer to use a neutral-tasting oil, but feel free to add your favorite oil. Use oil only if you’re using a chocolate bar or chocolate chips. Melting wafers already have oil.
  • Strawberries – Choose fresh, firm, and ripe strawberries for the best results. Make it the day you buy them or the next day. If you leave them to sit in the fridge any longer, they will soften and will start getting wet. It will be difficult to coat the chocolate if the strawberries get wet.

Step-by-Step Instructions to Make Chocolate-Covered Strawberries

Prepare the Strawberries

  • Wash the strawberries thoroughly and pat them completely dry with a paper towel. When I say dry, I mean absolutely dry!  Any moisture can prevent the chocolate from adhering properly.
  • Let it air-dry on a wire rack to ensure the strawberries dry completely.
  • Let the strawberries sit at room temperature to avoid causing the chocolate to seize when dipping.

Melt the Chocolate

  • Pour the milk chocolate chips into a microwave-safe bowl.
  • Microwave in 30-second intervals at 50% power, stirring after each interval.
  • Once it starts melting, use 15-second intervals at 50% power in the microwave.
  • Add oil and stir it well. The mixture will turn smooth and glossy.
  • Alternatively, use a double boiler by placing a heatproof bowl over a pot of simmering water. Stir constantly until the chocolate melts completely. Be careful not to let steam come in contact with chocolate. If it does, the chocolate will seize! Yes, chocolates are very finicky and don’t like moisture.

Dip the Strawberries

  • Hold a strawberry by its green leaves and dip it into the melted chocolate, turning it for an even coat.
  • Let any excess chocolate drip off before placing the strawberry on a parchment-lined baking sheet.
  • You can wipe off the excess chocolate on the rim of the bowl to avoid pooling in the parchment.
  • Continue dipping until all strawberries are covered.

  • Leave the strawberries at room temperature for at least half an hour to harden.
  • Once it hardens partially, drizzle melted chocolate on it. I’ve used the same milk chocolate, but you can use white chocolate to drizzle.
    Transfer the melted chocolate to a piping bag or ziplock for more control while drizzling. You can also use a fork to roughly drizzle the chocolate.
  • I don’t recommend refrigerating the strawberries as they will lose their shine and start sweating in the fridge.
  • Once set, serve immediately or store in an airtight container in the fridge for up to 24 hours.
