The Holidays are behind us, and the winter looms large in front of us. With all the binge eating that happened during the holidays, all I want to do now is indulge in plenty of comfort foods. Soups top the list, obviously as the evenings can get very cold.
I came across this Broccoli Almond Soup years ago when one of my friends posted it on Instagram. I immediately got the recipe from her and tried it. Bhargav and I were hooked. It was a regular in our dinner menu before we had our son. I would make some garlic bread alongside and we would relish every mouthful.
I never really tried giving soups to my son and this recipe got lost among the countless notes on my phone. My son loves Broccoli, and I felt no need to make it into a soup when he willingly ate it steamed or roasted. He loves my version of Oven roasted Broccoli.
I recently made this soup after a long hiatus. My son liked it but preferred the garlic bread over the soup. I made a mental note not to serve him bread till he was at least half done with his soup. Oh, the things you have to do when you have kids!

Ingredients for Broccoli Almond Soup
Broccoli
When you choose Broccoli florets, check for possible infestation. Also, make sure the Broccoli heads are green and not yellow.
Garlic
Reduce or increase the number of garlic cloves depending on your taste preference. Roasted garlic has amazing flavor!
Onion
Both Red and white onions should work for this recipe. I’ve use Red Onions.
Raw Almonds
You can either soak raw almonds and peel them or use store-bought blanched almonds.
Broccoli Almond Soup: Step-by-step Method
Step 1: Soak the almonds in hot water for 30 minutes.
Step 2: Chop the onions, garlic, and Broccoli. You don’t have to chop them finely, as we are going to grind them anyway. Wash the Broccoli florets thoroughly in water.
Step 3: In a pan, add a tablespoon of butter and let it melt. Once melted, add the chopped garlic and fry for 2-3 minutes, till the garlic is nicely roasted and turns light brown.
Step 4: Add the chopped onions and sauté till it turns light pink. Add some salt to sweat it.
Step 5: Add the washed Broccoli florets and stir fry for 2-3 minutes. Add 3 cups of water and bring it to a boil. Close the pan with a lid and let it boil for 15 minutes or until the Broccoli is tender.
Step 6: Turn off the heat. Use a hand blender to blend it into a soup. The consistency of the soup need not be fine. I personally like to have little pieces of Broccoli when I have a mouthful. If you don’t have a hand blender, cool down the cooked mixture completely and blend it in a blender.
Step 7: Meanwhile, peel the soaked almonds and add them to a blender with ¼ cup of water. Blend it to a fine paste.
Step 7: Add the blended soup back to the heat. Add a Bay leaf, salt, and almond paste. Bring to a gentle boil. Simmer for 5 minutes and turn off the heat.
Step 8: Serve the soup hot with a side of bread, breadsticks, or croutons.

Broccoli – 1 large head ( 300 grams)
Raw Almond – 30 ( 30 grams)
Garlic – 5 cloves ( 12 grams)
Onion – 1/2 (55 grams)
Bay Leaf – 1
Water – 3 +1/4th cups (divided)
Salt to taste

- Soak the almonds in hot water for 30 minutes.
- Chop the onions, garlic, and Broccoli roughly. Wash the Broccoli florets thoroughly in water.

Notes
- Increase or decrease the quantity of garlic as per your preference.
- You don’t have to blend the soup completely. Save a couple of Broccoli chunks for a good mouthfeel.
- Skip butter and use oil to make it Vegan.
