From being someone who hated oatmeal in all forms, I’ve come a long way in embracing it as one of my favorite meals. I’ve tried to cook oatmeal in all forms and have narrowed down my favorites. Trust me, you can never go wrong with my oatmeal recipes. I already have a chocolate oats recipe in my blog, that’s a family favorite.
Sometimes, we don’t feel like eating something sweet for a meal and that’s when this warm bowl of Savory oatmeal will save your day. Preparing takes less than 10 minutes- perfect for when you are rushed for time. You can have this as breakfast or dinner. I wouldn’t recommend it as a lunch-box recipe though. It’s best served warm.

Ingredients for Savory Oatmeal
Rolled Oats
Rolled oats work best for this 10-minute recipe. If you want to use steel-cut oats, soak it for 30 minutes, increase the cooking time to 30 minutes, and add an extra cup of milk or water to it.
Mixed Vegetables
You can use your favorite vegetables here. Make sure you dice them into bite-sized pieces. When I’m in a hurry, I use Costco’s frozen mixed veggies.
Onion
Use red onions for this recipe. Yellow onions also would work.
Garlic
Garlic combined with vegan milk gives off a delicious flavor that tastes like white sauce.
Almond Milk
I like to use plant-based milk for making Vegetable oats. You can use plant milk like Cashew milk, Oats milk, or Soy milk. You can also use cow’s milk if that’s all you have at home.
Step-by-step method for making Savory Oatmeal
Chop the onion and veggies into bite-sized pieces. Mince garlic finely. I like to use garlic presser which makes it very easy.
Heat a saucepan and add oil. Toss in the onions and garlic and fry till the onions turn translucent.
Add the veggies and cook for 2 minutes. (I used frozen veggies which reduced the cooking time by half. Cook till the veggies are half-done). Cook on medium heat from the beginning till the end.
Add rolled oats and almond milk. Stir it.
Once it starts boiling, start stirring and cook for 5 minutes on medium heat. Stirring frequently is important to get the white sauce-like creamy consistency.
Turn off the heat and serve it warm. I like to top mine with red chili flakes and some Italian seasoning.
Oatmeal thickens as it cools down. If you want to reheat it, add some almond milk and heat on a low flame stirring all the while. Another option would be to add the extra milk and microwave it in 30 second bursts stirring in between.
What spices can you add to savory oatmeal?
Any spices can be added to make this savory oatmeal super flavorful. Here are my favorite flavor combinations
· Dried basil with tomato paste
· Cumin powder, coriander powder, garam masala, and red chili powder
· Lemon zest and thyme
· ‘Everything but bagel’ seasoning
· Italian seasoning
How to store savory oatmeal?
I highly recommend making this oatmeal just before serving(It hardly takes 5-7 minutes). However, refrigerating the leftovers in an air-tight container would be best if you want to store them. While re-heating it, add some almond milk and heat on low flame. Alternatively, you can microwave for 30-second bursts by adding a splash of almond milk to it.
